Mashed Potato Pizza
Ever had potato skins? Well that's what I think of these except with mashed potatoes and a yummy crust! This is a game day favorite in our house - Caitlyn Warren!
1 pillsbury pizza crust
8 medium red potatoes (add more if you like a LOT of mashed potatoes), quartered
1/2 onion, finely diced
3 TB butter
1/4 -1/2 cup whole milk (whatever makes your potatoes the way you want them)
4 slices bacon, cooked and diced
1 1/2 cups shredded cheddar
2 bunches green onions, chopped
sour cream
Cook the quartered potatoes (remove skins if you please), and then mash. Saute the onion in the butter until cooked. Add to the potatoes and add the milk until your desired creaminess or chunkiness. Spread your pizza crust on a non-stick baking sheet, spread it out to a rectangle shape. Cook for 8 minutes of the regular temp on the Pillsbury Pizza Crust directions. Spread the mashed potatoes on the crust, top with the bacon and cheese. Return tray to oven until the edges are browned and the cheese is melted (roughly 6-8 minutes). Top with green onions and sour cream, or serve those on the side! ENJOY!
