Matt's Simple and Magnificent Tilapia
(5-8 minute prep and 8-10 minute cook)
-Tilapia fillets
-Olive Oil
-Cooking Spray
-Salt, Pepper, Old Bay
-1 Lemon
-Grated Pecorino Romano (or Parmesan)
Preheat oven to 375 degrees. Dry off the tilapia with paper towels. Drizzle olive oil on both sides and rub in. Place filets in baking pan with cooking spray. Squeeze half the lemon on the top of filets. Liberally apply salt and pepper, season with a bit of Old Bay. Generously apply grated romano (or parmesan). Place thinly cut slices of lemon on and around filets. Cook for 8-10 minutes and enjoy.
